Savory Ham, Spinach, and Blue Cheese Breakfast Rolls
I hadn’t planned on posting this recipe since it just came out of me goofing around in the kitchen with what we had in the house, but I posted a photo on Instagram someone asked if the recipe was going to be available, so here it is! It’s not exact science since I was flying by the seat of my pants, but I am sure yours will come out great too.
- 2 cups all-purpose unbleached flour
- 2 cups besan (chick pea flour)
- 1/8 cup cane sugar
- 2 teaspoons instant yeast
- 1 teaspoon sea salt
- 1 egg
- 3 egg whites (You could probably use 4 whole eggs total and it would be great, I just had some leftover egg whites from yesterday’s pasta adventure. )
- 1 cup milk
- 1/4 cup melted coconut oil (if you use whole eggs instead of whites probably cut this down some)
- 1 tablespoon minced garlic
- Whatever you would like for filling. I used 1 cup baby spinach, 1/2lb thinly sliced McKenzie honey ham, 1/2 cup crumbled blue cheese, and a little spicy brown mustard.
Mix all the dry ingredients together in a medium/large bowl. Mix eggs and coconut oil in blender until foamy. Add milk and garlic to egg mixture, then add wet ingredients to dry. Mix to incorporate, then either knead 10 minutes by hand, or 2-3 minutes in your stand mixer. Dough should bounce back when poked when you’re done. Set dough to rise either in a warmed oven (set to preheat for 2-3 minutes then shut it off) with a damp tea towel on the rack above it, or use the yogurt function on your Instant Pot for 60 minutes or until dough has doubled.
Punch dough down, and roll out to about 1/4″ thickness on a floured surface. Spread toppings evenly, and roll dough up tightly but without tearing. Use a sharp chefs knife to cut into 18 equal slices. Place slices on a baking sheet ( I needed two, mine is small) with a minimum of 1.5″ space between them. Brush with egg whites if you want your rolls to be a little shiny and fancy. Warm your oven as described above, and let rolls rise a second time, about 40 minutes. Take rolls out of the oven and preheat to 350F. Bake for 25-35 minutes or until rolls are golden and edges are turning light brown. Serve warm.
